Back in the day, when I worked as a therapist for Dr. Knight at Knight Chriopractic, I used to go to Leucadia Pizzeria in Encinitas for lunch sometimes (other days it might be Oscar's, Subway, or Red Robin). Well, they made this amazingly tasty cold pasta salad that I am craving...right now. I wish I knew the recipe. It was great. It had olives, sundried tomatoes, feta cheese and large penne noodles. There was certainly more, but I can't remember; it has been about 3 years since I ate there. Boy it was good.
